Assembly is a creative dessert studio built around one simple question: why do desserts keep getting more complicated when what we actually crave is depth, and what we remember is simplicity, done with real craft? Butter, browned until it remembers itself as something else. Flour milled closer to its wild ancestor than most. That's where the depth actually comes from — not added on top, but drawn out of the ingredient itself, whether that's a grain or a fruit that's only itself for a few weeks a year. Assembly, in its plainest sense, is just that — simple things, brought together into something with more depth than their sum would suggest.

Everything is made to order, in small batches, by hand, in Vancouver.
